Banh Xeo (yellow pancake) Kit

Banh Xeo is a crispy, Vietnamese crepe filled with onions, protein, bean sprouts, and mung beans. They are then eaten with fresh herbs and veggies!

Banh Xeo is a personal favourite and one I usually ate at restaurants growing up because this dish was not always easy to make as the best batter for that crispy texture required sitting overnight. 

While on holiday to Vietnam, I finally had the time to test and develop this recipe so I am excited to finally share it. And here it is, our easy and fun to make Banh Xeo Kit - 2 crepes ready in 10 mins. 

This recipe is a little bit of me, my mother-in-law and inspiration from my recent trip to Vietnam. 

The perfect starter for two, or dinner for one.

Batter:
Rice flour (100%), premium coconut milk, turmeric powder, green onion, filtered water.

Filling: onion, mung beans, (choice of protein: classic pork, prawn or vegetarian option).
